Bột rau câu ngâm cùng 2 lít nước khoảng 15 phút cho nở. Xoài gọt vỏ ngoài, thái miếng cho vào máy xay cùng ít nước lọc rồi xay nhuyễn, sau đó lọc qua rây để lấy nước cốt. Phần nước ngâm bột thạch rau câu chia làm 2 phần. Một phần cho nước cốt xoài vào ngoáy đều cùng 40g đường rồi đặt lên bếp đun sôi.
Cùng thời gian đó cho phần nước thạch rau câu còn lại vào một nồi khác đặt lên bếp, khi thấy nước sôi lăn tăn thì cho 2/3 gói bột cốt dừa vào khuấy đều cho tan. Khi 2 nối thạch rau câu sôi được khoảng 5 phút thì tắt bếp.
Đổ lớp mỏng thạch xoài vào hộp chữ nhật hoặc hộp vuông. Khi thấy lớp thạch xoài hơi se phần mặt thì tiếp tục nhẹ nhàng đổ phần thạch cốt dừa lên trên. Lần lượt đổ tiếp các lớp đến hết. Để thạch nguội hẳn thì cho vào ngăn mát tủ lạnh khoảng 2 giờ đồng hồ cho thạch đông hẳn.
Thạch xoài cốt dừa mát lạnh, ngọt thơm hương xoài chín đặc trưng, béo ngậy nước cốt dừa. Đặc biệt các lớp thạch màu vàng xem kẽ màu trắng sữa sáng bóng rất bắt mắt.
