Bánh ít lá dứa là 1 loại bánh của miền tây nam bộ, bánh dẻo thơm mùi lá dứa, nhân bên trong là dừa béo ngọt, làm thành món ăn dân dã mà ngon miệng, cách làm lại dễ để làm tặng cho mỗi người thân trong gia đình.
Lá dứa rửa sạch thái nhỏ ,đem xay nhuyễn cùng 1 chén nước ấm, vắt lấy nước cốt lá dứa. Trộn nước lá dứa với bột nếp thêm chút muối vào nhồi đến khi bột mịn (nếu thấy bột quá nhão có thể thêm bột nếp, khô thì thêm nước ấm).
Cho 150g đường nâu vào chảo xào rồi thêm nửa chén nước, 1/2 ống vani (nước hoặc khô), cho dừa nạo đảo đều thấm hết đường, xào đến khi dừa cạn hết nước cho thêm 1 muỗng cà phê bột năng, đậu phộng rang đảo đều một lúc tắt bếp, để nguội và vò thành viên tròn thật chật, để viên dừa không bị rời khi gói (khoảng 6 viên nhân).
Bột chia làm 6 phần vỏ, nắn mỏng, cho nhân vào giữa bao kín nhân lại (túm sao cho nhân k bị lòi ra ngoài), sau đó vo tròn áo dầu ăn bên ngoài bột cho bột không dính lá khi hấp. Ta chuẩn bị lá chuối luộc sơ để lá được đẹp và dễ gói, cắt lá chuối cho gọn cuộn lại thành hình cái phễu cho viên bột vào giữa, gấp mí lá lại, gói đến khi hết bánh.
Đặt xửng hấp lên bếp đun sôi nước cho bánh vào xửng hấp khoảng 20 phút bánh chín. Vậy là đã hoàn thành phẩm chỉ cần cho người thân thưởng thức bánh mới ra lò do chính tay mình thực hiện.
