Bật trước lò nướng ở nhiệt độ 350 độ F, quét khuôn muffin bằng một lớp dầu dừa rồi để riêng. Bóc vỏ chuối rồi dùng nĩa nghiền thật nhuyễn, sau đó cho trứng gà và tinh chất vani vào trộn đều.
Băm nhuyễn hạt óc chó. Trong một cái tô khác, bạn cho bột mì đa dụng, bột quế, baking soda, muối vào trộn đều, cho tô bột khô này vào tô hỗn hợp chuối ở trên rồi trộn đều lại, thêm hạt óc chó vào trộn lại một lượt nữa. Lưu ý không trộn quá tay nhé!
Múc hỗn hợp bột từ tô vào khuôn muffin đã chuẩn bị sẵn, bạn múc khoảng 2/3 khuôn và không múc quá đầy để bánh còn nở nữa nhé. Cho khay bánh vào lò và nướng trong 25-30 phút cho đến khi chín vàng.
Bánh nướng xong, bạn để nguội hoàn toàn trên rây, thưởng thức lúc còn âm ấm là ngon nhất. Bánh muffin chuối hạt óc chó với vị ngọt và mềm thơm tự nhiên từ chuối chín và hạt óc chó bùi béo sẽ khiến bạn cảm thấy rất hài lòng.
