Sả, tỏi, gừng rửa sạch cắt nhỏ. Sau đó đem xay nhuyễn. Trộn đều sả, tỏi, gừng đã xay với 1 gói ngũ vị hương, 1 muỗng cà phê muối, 1 muỗng cà phê hạt nêm, 3 muỗng canh dầu hào, 3 muỗng canh đường, 5g ớt bột.
Ướp thịt với hỗn hợp gia vị vừa trộn ở trên trong ít nhất 8 tiếng hoặc qua đêm.
Sau đó lấy thịt ra, bật bếp để lửa vừa rồi bắt đầu nấu, ban đầu thịt sẽ tiết ra nước sau đó cạn dần, khi thịt bắt đầu chín có thể nêm nếm sao cho hợp khẩu vị nhé, miễn sao bò khô khi xong sẽ có vị cay nhất, sau đó đến vị ngọt và cuối cùng là mặn, khi gia vị bám quện vào thịt và nước bắt đầu cạn thì tắt bếp.
Dùng chày hoặc cây cán bột, hay búa đập thịt dần hoặc cán thịt cho miếng mỏng ra.
Sau đó cho vào lò sấy ở 100 độ C đến khi thịt khô. Sấy khô ở mức độ nào tùy thuộc khẩu vị, nếu thích ăn thịt mềm có thể để khô vừa, còn nếu thích dai và cứng giòn thì có thể để khô hẳn lại.
Khi lấy thịt ra nhớ hong thịt cho thật khô rồi mới cất vào lọ bảo quản.
